Tulips, Coastlines & Green Tea

Swindari, Jeju’s humble traditional fermented drink, is a softly sweet and tangy beverage that captures the island’s resourceful spirit. Made from leftover cooked rice or barley with nuruk, this low-alcohol drink was born from a simple necessity: preserving grains before they spoiled during Jeju’s warm summers. Its gentle fermentation transforms leftover grains into something refreshing and deeply connected to island life.

Beyond its humble origins, Swindari reflects Jeju’s distinctive food culture, where making the most of available ingredients was essential. Barley was historically an important grain on the island, and households traditionally fermented leftover cooked grains rather than letting them go to waste. The result is a drink with a naturally sweet and slightly sour character. Its other name, Dansul, reflects its sweetness.
The process is wonderfully simple yet fascinating. Cooked rice or barley is combined with water and nuruk, then left to ferment for a short period. As the grains slowly break down, the mixture develops its distinctive aroma, flavor, and gentle carbonation.
